    • 6 snow peas, thinly sliced on the diagonal
    • 1 spring onion, thinly sliced
    • 1/4 cup cubed chickpea tofu
    • TO SERVE:
    • a small handful of cilantro
    • a pinch of red pepper flakes
    • a dash of soy sauce
