    • 4 large thick-cut pork chops (boneless or bone-in are both fine) (I used boneless pork chops that were about 8 ounces EACH)
    • 1 tablespoon olive oil
    • ½ cup ketchup
    • ½ cup chicken broth
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon brown sugar
    • 1 teaspoon salt
    • 1 teaspoon chili powder
    • 1 ½ teaspoons ground mustard
    • 1 sweet onion (sliced)
    • Optional garnish: squeeze of fresh lemon juice, chopped fresh parsley
